16/ Trail Mix Cookies

This is in homage to the most divine cookie made by Picnic JH, whose trail mix cookie I declare perfect for breakfast, lunch or dinner. Pairs nicely with Grand Teton Brewing's Bitch Creek ESB.

Beat until mixture resembles wet sand: 

  • 16 tbl. butter, softened
  • 2 c. flour
  • 1 c. packed dark brown sugar
  • 1 tsp. baking soda
  • ½ tsp. salt

Mix in thoroughly:

  • 2 eggs
  • 2-3 tsp. vanilla

Fold in: 

  • 2 c. oats
  • 1 c. chopped pecans
  • 1½ c. mini chocolate chips
  • 1 c. coconut flakes (unsweetened)
  • ½ c. dried cranberries
  • optional: ¼ c. pumpkin seeds

Chill dough for at least 2 hours. Scoop by large scoop onto baking sheet and bake in 375° oven for 10-12 minutes or until lightly browned and set in middle.
