31/ Slow Cooker Butter Chicken
Brown in a hot cast iron skillet with 1-2tbl. avocado oil:
- 2 lb. cubed chicken breast
Remove to slow cooker. Wipe pan and then cook on medium-low heat until onion is translucent:
- ½ sweet onion, diced
- 4tbl. butter
Add and sauté until fragrant:
- 2 tsp. curry powder
- 1 tsp. turmeric
- 1 tsp. garam masala
- ½ tsp. black pepper
Add to chicken in slow cooker. Add and cook on low for 4 hrs:
- ½ - 1 tsp. grated fresh ginger (to taste)
- 2 tbl. tomato passata
- ½ c. hot water or broth
- 2-3 cloves garlic
Before serving, add in:
- salt, to taste
- ½ - 1 c. heavy cream
- fresh cilantro
