31/ Slow Cooker Butter Chicken

Brown in a hot cast iron skillet with 1-2tbl. avocado oil:

  • 2 lb. cubed chicken breast

Remove to slow cooker. Wipe pan and then cook on medium-low heat until onion is translucent: 

  • ½ sweet onion, diced
  • 4tbl. butter

Add and sauté until fragrant: 

  • 2 tsp. curry powder
  • 1 tsp. turmeric
  • 1 tsp. garam masala
  • ½ tsp. black pepper

Add to chicken in slow cooker. Add and cook on low for 4 hrs: 

  • ½ - 1 tsp. grated fresh ginger (to taste)
  • 2 tbl. tomato passata
  • ½ c. hot water or broth
  • 2-3 cloves garlic 

Before serving, add in: 

  • salt, to taste
  • ½ - 1 c. heavy cream
  • fresh cilantro
