17/ Pumpkin Bread

Tastes better the next day. A rare bread I make with oil; I use extra light olive oil.

Whisk dry ingredients together in a medium bowl:

  • 3½ c. flour
  • 2½ c. sugar
  • 2 tsp. baking soda
  • ½-1 tsp. salt
  • 2½ tsp. (or more) pumpkin pie spice or whatever mix of cinnamon/nutmeg/cloves/ginger/allspice you like!

Whisk together in large bowl: 

  • 4 eggs
  • ¾ c.  vegetable oil
  • 1 can pumpkin (15-16oz)
  • ⅔ c. water

Whisk dry ingredients into wet until thoroughly mixed. Pour into 2 large (or 3 small) greased loaf pans. Bake at 350° F until a toothpick inserted in center comes out with just crumbs on it, about 40-50 min. depending on your oven and loaf pan.
