7/ Habanero Aioli
 My favorite accompaniment for a hamburger, tuna burger, BLT or oven-roasted wedge fries. 
			
  				With a large balloon whisk, whisk together in a medium bowl:
- 1 egg yolk
 - 1 tsp. Dijon mustard
 - 1 clove garlic, minced
 - pinch of salt
 - 1 chopped habanero chili, no seeds
 - 1 tsp. fresh lemon juice or tarragon vinegar
 
While vigorously whisking, add in drops at a time:
- 6 oz light olive or canola oil
 
The key to making a perfect mayo is being patient adding the oil initially as you whisk: Drop by drop. I find red-table cloth Italian restaurant oil & vinegar bottles the perfect tool for this. You can shake them pretty hard and get a steady stream of drops perfect for emulsifying a mayonnaise.
