29/ Grain-free Granola Butter
Fascinated by the concept of "granola butter," I wanted to try to make a simple one but without oats.
In a small saucepan over medium-low heat, stir until golden (careful: it will continue to brown after you turn off heat so err on side of very light brown):
- ½ c. raw unsalted cashews
- ½ c. roasted or raw unsalted almonds
- 1 c. unsweetened coconut flakes
- ¼ c. high-MCT coconut oil
- 2 tbl. maple syrup
- 1 tbl. honey
Blend in food processor until smooth with:
- 2 tbl. (or more it will just make it thicker!) flax seed meal
- ¼ tsp. pink salt (or to taste)
- ¼ tsp. vanilla (optional)
