20/ Crunchy/Chewy Granola

You can be very playful with this; add some maple syrup instead of brown sugar, butter instead of coconut oil, cinnamon or no, pecans or almonds ...

Mix in a large bowl: 

  • 1½ c. old fashioned oats
  • 1½ c. wide cut coconut
  • 1½ c. chopped pecans
  • ½ tsp. salt
  • ½ tsp. cinnamon if you're in the mood (haha usually I'm not)


Gentle microwave until melted and pourable (note: you can be playful with proportions, I just make sure I have about ¾ TOTAL of mix):

  • ¼ c. coconut oil or Kerry Gold butter
  • ¼ c. honey
  • ¼ c. brown sugar
  • 1-2 tsp. vanilla (add in after melted)

Pour over oat mixture and mix thoroughly. Spread out into a large baking pan and bake in a 300° oven, stirring every 10-15 minutes, until golden brown. Allow to cool thoroughly. Can be sticky, so turn out on parchment! 

Honey + brown sugar make for clustered and crunchy-chewy granola. Regular stirring and low oven temps assure an evenly browned granola.
