20/ Crunchy/Chewy Coconut Almond Honey Granola

You can be very playful with this; add some maple syrup instead of brown sugar, butter instead of coconut oil, cinnamon or no, pecans or almonds ...

Mix in a large bowl: 

  • 1½ c. old fashioned oats
  • 1½ c. wide cut coconut
  • 1½ c. slivered almonds
  • 1½ c. puffed rice
  • ½ tsp. salt
  • ½-1 tsp. cinnamon

Gentle microwave until melted and pourable (note: you can be playful with proportions, I just make sure I have about ¾-1 c. TOTAL of mix):

  • ⅓ c. coconut oil
  • ⅓ c. honey
  • ⅓ c. brown sugar

Pour over oat mixture and mix thoroughly. Spread out into a large baking pan and bake in a 300° oven, stirring every 5-10 minutes, until golden brown. Allow to cool thoroughly. Can be sticky, so turn out on parchment! 

Honey + brown sugar make for clustered and crunchy-chewy granola. Regular stirring and low oven temps assure an evenly browned granola.
