19/ Chocolate Chip Cookies II: Thin
These have an almost caramel taste because of all the brown sugar and butter. Excellent for making ice cream 'wiches.
Beat until light and fluffy:
- 2 sticks unsalted butter, softened
- 1¼ c. brown sugar, packed
- ½ c. granulated sugar
- 1 tsp. baking soda
- ½ tsp. salt
Beat in:
- 1 egg
- 2 tsp. vanilla
Mix in gently until just uniform:
- 2 c. flour
- 2 c. chocolate chips
- 1 c. chopped pecans or walnuts (optional)
Scoop evenly onto cookie sheet (greased or a Silpat helpful as they can stick). Bake in 350° oven until golden brown and just barely set in middle. Cool several minutes before removing from pan.
